Valentine Goodies

Valentine's Day is the perfect day for showing your love and affection, but it can also be a great day to treat yourself to something special.  With that in mind, here are a few of the things I've been hoping for this Valentine's Day.

1.  Fresh tulips to remind me of spring
2.  Chocolate Malted Milk Ball ice cream from Edina Creamery, Edina, MN.  The best ice cream I've ever had.
3.  Small, portable make-up bag for weeknight sleepovers
4.  This is my puppy from home, and I wish I could have a puppy just like him to spend the day with
5.  Bright and playful wallet that can also be used as a clutch
6.  Michael Kors watch
7.  Truffle Oil for a delicious dinner in

Hope you all have a fabulous day!

Princess for a Day

Whenever I go home to Minneapolis, I like to take full advantage of the tax-free shopping.  This gorgeous skirt I found at White House Black Market and I'm so excited to wear it.  It's a tulle skirt that's pleated and has lots of movement when you walk.  The tulle reminds me of those princess-cut prom dresses (but in a much better way).  I plan on wearing it out for my birthday.

Although it's paired here with black heels, I'm going to wear it with something a little more fun like these:

GUESS Hondolie Pump
Valentino Bow Pump

Christian Louboutin Decollete Suede Red Pumps

I'm still stuck on deciding exactly what I want to wear on top.  In the spring I'll probably wear it with a tank top, blazer, and some flats.  On a night out I don't want to wear a sweater with it, though...any suggestions?

Salmon with Risotto

Last weekend I finally received my new Kitchenaide mixer in the mail and I've been dying to try it out.  I was celebrating a friend's birthday which I thought would be the perfect occasion to make something special.  My lack of planning coupled with Trader Joe's not carrying the necessary baking ingredients, led me to make plain, boring chocolate cupcakes with my hand mixer.  So, to make up for my lack of culinary creations Saturday I decided to make a yummy dinner Sunday night.  (There will be more to come on my Kitchenaide adventures, so stay tuned!)

Here is what I whipped up:

Salmon
I had 2 filets that I marinated last minute in honey, olive oil, shallots, lemon juice and some lemon zest.  I think in the future I'm going to marinate them longer like the recipe called for.

1 tablespoon olive oil
2 tablespoons honey
1 small shallot, finely chopped
2 tablespoons lemon juice
1/2 tablespoon lemon zest
1/2 fresh lemon, sliced

Preheat oven to 400°F.  Line a glass baking dish or baking sheet with aluminum foil and place filets inside.  Whisk olive oil, honey, shallot, lemon juice and lemon zest together in a bowl.  Pour marinade over salmon and turn to coat, if necessary.  Top salmon with lemon slices and bake for about 12-15 minutes, or until salmon is opaque in the center.

Lemon and Pea Risotto
(serves 3-4)

3 cups reduced-sodium chicken broth
2 cups water
  • 2 cups frozen or fresh peas
  • 2-3 bacon or pancetta slices
  • 1 small onion, finely chopped
  • 1-2 small shallots, finely chopped (optional)
  • 4 tablespoons unsalted butter, divided
  • 1 1/4 cups Arborio rice
  • 1/4 cup dry white wine
  • 1 tablespoon grated lemon zest
  • 1/4 cup grated parmesan

To begin, combine the chicken broth, water, and peas in a saucepan and bring to a simmer (If using fresh peas, feel free to omit these until the very end).  Simmer, uncovered, for about 5 minutes.  Remove peas and place in a bowl or strainer to cool.

In skillet, cook bacon or pancetta over medium heat and transfer to paper towel coated plates.  Once cooled, finely chop bacon into small bits and set aside.

In a large saucepan, begin melting 2 tablespoons butter and a couple of sprinkles of salt.  Add onion (and optional shallots) and cook over medium heat just until onions begin to soften.  Add the rice and continue to stir until it's just coated in the onion and butter.  Pour the white wine in and simmer, stirring constantly.  Once the wine is absorbed, mix in 1/2 cup broth mixture from your first saucepan and continue to simmer and stir until it's absorbed.  Add another 1/2 cup of the broth mixture and continue to simmer and stir.  Repeat this process for about 17-20 minutes or until the rice is creamy and cooked (be sure to wait until the broth is absorbed before adding more to the rice each time).  There may be leftover broth mixture, although there wasn't very much with mine.

Stir in bacon bits, peas, 2 tablespoons butter, lemon zest, and a dash of salt and pepper.  Once heated through, grate fresh parmesan generously over risotto and mix in.

Sorry for the lack of pictures - I promise to have some next time.  Enjoy!

Dreaming of Exposed Brick. . .

I've been dreaming all day about my ideal loft apartment in the city and I came across these beautiful spaces.  There's something irresistible about the exposed brick, wood flooring and high ceilings with exposed beams.  I love the charm, architecture, and detail in each of these rooms.

Happy New Year!

Happy New Year everyone!  This year my new year's resolutions are all about things that make me happy and I've decided to write them down in an effort to actually keep them.

In no particular order. . .

1.  Keep in better contact with old friends
2.  Cook more!
3.  Start this blog (check!)

I'm hoping 2011 is as great as 2010 (it's hard to beat graduating college, moving to Chicago, and starting a new job) and am eager to begin my resolutions.

What are your resolutions for 2011?

A New Year, A New Blog

Welcome to A Thousand Tulips!  In an effort to start out 2011 with a bang, I'm beginning this blog to document my journey as a recent graduate living and working in the beautiful city of Chicago.  I am so excited to begin the new year and to share my love for design, food, and all things fabulous.

Cheers!
Jamie
